Preparation

Cooking fish on a griddle

Brush the fish in olive oil and chopped herbs.

Place a sheet of parchment paper on the griddle to make sure the fish doesn’t stick to it. Drizzle a little olive oil on the paper and cook the fish for about 4 minutes per side. Season with salt only at the end of cooking.

To check the doneness of a fish fillet, poke the fish with the tip of a knife and test how hot it is, by placing it to your lips. If the tip of the knife is hot, the fish is done. If not, then continue cooking.

A whole fish is done cooking when the meat easily separates from the bones.



Cooking meat on a griddle

Brush the meat with olive oil and chopped herbs. Any time you plan to cook meat on a griddle it must be brushed with olive oil or marinated.

Place the meat on a hot grill and cook.

Sausages can be cooked whole or cut in half.

During cooking, flip the meat from time to time and season with salt. Check doneness by cutting with a knife.
