Made with butter and flour, brown roux can be used to make a sauce using the pan juices from roast meats.
 




Ingredients for 4 people


3 ½ oz all-purpose flour
3 ½ oz butter


Preparation

Melt the butter in a saucepan over low heat, being carful not to let it brown.

Sieve the flour and add it to the butter. Mix with a whisk until it forms a smooth, uniform mixture.
