How to make dough without butter

Pizza, bread, pasta and many other Italian foods are made from butter-less dough. Learn how to prepare the dough here.




Ingredients for 4 people


1.5 lb. soft wheat flour
½ lb. high gluten Canadian flour
¾ oz. yeast
1 pinch salt
2 tbsp. oil
3 ½ tbsp. warm water


Preparation

Mix together the flours, then place them on a flat work surface or wooden cutting board and form a well.

Place the yeast in a bowl of warm water, stir and let dissolve for a minute.

Gradually pour the water and yeast into the center of the well and begin mixing it into the flour using a fork.

Do not let it escape from the center of the well. Add the oil and then the salt. Using a dough scraper, collect the any remaining flour.

Then, begin to knead the dough stretching it out, then folding it over. Continue to knead the dough until smooth. If it is too dry, add a little water. If it becomes to wet, add a little flour.

Once you are done kneading the dough, cover it with a damp cloth. This allows for air to pass back and forth without drying out the dough.

Let the dough rest until it has doubled in volume. To check to see if the dough has finished rising, press it with your fingertip and if the fingerprint disappears, it is ready to be cooked.

Now you can use the dough to prepare pasta, bread or pizza.
