Fresh egg pasta, together with dried pasta, is the symbol of Italian cuisine throughout the world.

11 oz. flour
3 large eggs


Preparation

Place the flour on a flat work surface and shape into a well.

Break the eggs, preferably at room temperature, into the center.

Use a fork to start incorporating the flour into the eggs.

As soon as the mixture reaches a certain consistency, begin working with the aid of a dough scraper.

When the dough is large enough, begin working with your hands.

Continue to knead until it becomes smooth.

Add a few drops of water if it is too dry or a little flour if it is too wet.

Dust the dough with flour and let rest for 30 minutes wrapped in a damp cloth.

Once the dough has rested, it is ready to be rolled out with a rolling pin into sheets of desired thickness.
