Mayonnaise is probably one of the most famous sauces in the world and is the perfect accompaniment for a multitude of dishes, from salads to fish, chicken and vegetables.




Ingredients for 4 people


6 egg yolks
3/4 cup seed oil
4 tbsp lemon juice
salt to taste


Preparation

To make a good mayonnaise, try to keep the ingredients at room temperature or slightly warm.

Crack the eggs and separate the 6 yolks from the whites.

Put the egg yolks in a large bowl and begin whisking. Then, add a pinch of salt and the lemon juice.

Continue whisking and slowly add the olive oil.

Quickly whisk the mayonnaise until it forms soft peaks.
