How to make mixed meat stuffing

A classic meat stuffing enriched with the flavor of prosciutto crudo.
 




Ingredients for 4 people


25 oz meat
1 egg
4.5 oz prosciutto crudo thickly sliced
2 oz Parmigiano Raggiano
½ cup white wine
1 leek
parsley
extra virgin olive oil
salt
freshly ground black pepper


Preparation

Cut the meat, pork or other, into two slices, then chop with a knife.

Add the olive oil to a pan and place on the heat. Once hot, add the meat.

Cut the leek in half and slice thinly lengthwise.

Stir the meat in the pan so that it doesn’t burn, then season with salt and pepper. Add sliced leek.

Continue cooking over high heat, while stirring. Then add the wine and let evaporate for a second. Then, lower the heat and cover the pan.

Dice the prosciutto and chop the parsley. Add half the parsley to the meat and stir.

Once the meat is done cooking, remove it from the heat and transfer the pan contents to a blender or food processor.

Add the remaining parsley and prosciutto crudo and blend, adding a little olive oil.

Once the meat is finely ground, transfer it into a bowl and let cool. Once the meat is cool, mix in the egg and grated cheese. Adjust the salt and pepper.
