Preparation
Clean and chop the onion and celery.
In a pan, heat the oil, then add the chopped vegetables.
Season with salt and pepper and stir.
The salt will bring out the water in the vegetables, speeding up the cooking time.
When the soffritto is hot, lower the heat and cook until the vegetables have taken on an amber color.
Use your soffritto to prepare a wide variety of traditional Italian dishes.
