Preparation
Add 2 eggs and 2 egg yolks to a bowl.
Add the sugar and whisk until frothy. The batter should be light in color and have doubled in volume.
Sift then flour and starch. Using a spatula, fold the flour and starch into the batter, working from the bottom up.
Once the batter is well mixed, pour it into a cake pan that has been greased and floured. Fill the pan only halfway.
Bake in a non-convection oven at 350° F for 25 to 30 minutes.
To test the doneness of the cake, poke it with a toothpick If it comes out dry, then it is done.
Before cutting or decorating the cake, let it cool on a rack.
