Soft and crumbly, sweet shortcrust pastry, pasta frolla in Italian, is the base of many cakes and cookie recipes.
 




Ingredients for 4 people


7 oz Italian "00" flour or all-purpose flour
3 ½ oz butter
3 ½ oz sugar
2 eggs
1 lemon zest
1 pinch salt


Preparation

Using a spoon, cream the sugar and butter.

Once you have a grainy dough, add the eggs and grated lemon peel.

Continue kneading the dough, gradually incorporating the sifted flour and a pinch of salt.

Knead the dough until smooth and uniform. Add more flour if the dough is too sticky.

Once the dough is firm, shape it into a log or brick.

Carefully cover in plastic wrap and let dough rest for at least two hours in the fridge before use.
