How to make a white roux


Roux is the mixture of flour and butter that is used as the base of various sauces, like a classic béchamel.

Ingredients for 4 people

3 ½ oz all-purpose flour
3 ½ oz butter


Melt the butter in a saucepan over low heat, being carful not to let it brown.

Sieve the flour and add it to the butter. Mix with a whisk until it forms a smooth, uniform mixture.

Cook for about 2 or 3 minutes, keeping in mind that the roux should remain white.
