Preparation
Divide the dough into two pieces with a dough scraper.
Use your fingers to flatten the dough, then pass it through the machine to make thinner.
Once you have rolled the entire sheet through the machine, fold the dough in two and pass it through again.
Repeat the operation several times, dusting the dough with flour on both sides before passing it through the machine again.
Adjust the thinness of the sheet of pasta using the knob on the machine.
Before rolling the dough each time, turn the knob to a thinner setting until the dough reached the desired thickness.
