Ricotta & Spinach Tortelloni

The classic combination of leafy green spinach and farm-fresh Ricotta cheese has long been a favorite filling for the fresh pasta makers of Italy. This delectable flavor duo appears in ravioli, lasagne, and many other local varieties of filled pasta – even some that can be found in only a single village or town.

Tortelloni can take on heartier, more substantial sauces, including butter, cream or vegetable-based sauces. Best when served warm, Tortellini and Tortelloni are perfect when paired simply with melted butter or extra virgin olive oil, topped by a generous sprinkling of freshly grated Parmesan cheese. Partnering them with one of Barilla Traditional Red Sauces allows you to create an authentic Italian meal in no time.

01. Bring 3-4 quarts of water to a rolling boil. Add salt if desired.
02. Add Tortellini. After water returns to a boil, cook for 10 -11 minutes (stir occasionally).
03. Drain gently and serve.
