Almond Stuffed Peaches

Ingredients for 4 people

4 peaches
2 ounces almonds

skin removed
½ bread roll soaked in milk
2 eggs
1/3 cup sugar
Butter for greasing baking sheet as needed

Preparation 20 minutes preparation + 30 minutes cooking
1. Peaches should not be too ripe

2. Cut them in half, remove pits and scoop out part of the inside, so that the cavity in the middle will be able to accomodate the filling

3. Arrange the peaches in a buttered baking dish

4. Prepare the filling: Squeeze out excess milk from the soaked bread roll and chop

5. Beat egg yolks with sugar, reserving one egg white

6. Crush peeled almonds in a mortar together with the peach pulp, soaked bread and egg yolk/sugar mixture

7. Mix well and fold in 1 egg white beaten to stiff peaks


9. Fill peach halves with filling and cook in a preheated 300°F oven for 30 minutes

10. Serve warm, sprinkled with confectioner’s sugar
