Ingredients for 4 people


1 3/5 cup all-purpose flour
1 cup milk
2 eggs
¼ cup sugar
1 ¼ tablespoons rum
2 teaspoons baking powder
4 Golden Delicious or rennet apples
oil for frying
sugar for dusting
pinch of cinnamon
pinch of salt

Preparation 20 minutes preparation + 5 minutes cooking

In a bowl, make a batter by whisking together the milk, flour, two egg yolks, one tablespoon of sugar, a pinch of salt and rum.

To lighten the batter, fold in the stiffly beaten egg whites or add a teaspoon of baking powder.

Peel 3 or 4 large apples (Golden Delicious or Rennet variety), remove the core in one piece and cut the apple into slices crossways about 3/8 inch thick.

Dredge the slices in the batter and fry in a large quantity of boiling oil over medium/high heat until golden (you can test the temperature of the oil by adding a few drops of batter).

Fry on both sides, turning over when half done.

Drain the fritters on paper towels and let them rest for a few minutes.

Serve warm, sprinkled with confectioner's sugar and a pinch of cinnamon if desired.
