Ingredients for 6 people

1 Fresh Lemon
1/2 cup Butter
3/4 cup Sugar
2 Eggs Beaten
1 1/2 cup Flour
2 tablespoons Milk
1/2 teaspoon Baking Powder
3 cups Macintosh Apples Peeled Sliced Thin
2 tablespoons Apricot Jam

1. PREHEAT oven to 350ºF

2. GRATE lemon zest to measure 1 teaspoon

3. In a separate bowl, squeeze lemon to measure 1 tablespoon juice

4. Set aside

5. COMBINE butter and sugar in a large mixing bowl and mix until light and fluffy

6. Add eggs one at a time, beating well after each addition

7. STIR in flour, lemon zest, milk, salt and baking powder; mixing on low speed just until combined

8. Spread dough into a 10-inch tart pan with a removable bottom

9. PEEL apples and slice thin

10. Arrange apple slices over dough mixture, pressing apples into the dough

11. COMBINE jam and lemon juice in a small microwaveable bowl

12. Microwave on high 30 seconds or until melted

13. Brush mixture over apples

14. BAKE for 35 to 40 minutes or until apple slices are tender and crust is baked

15. Cool before serving
