Baccalà alla Lucana (Lucania-style Salt Cod)

Ingredients for 4 people

1 3/4 pound salt cod
5/8 pound pickled peppers
5 tablespoons extra virgin olive oil
Salt to taste

Preparation preparation 20 minutes cooking
1. Clean, bone and keep in cold water for 3 days, changing the water at least twice a day

2. Once it's ready, boil in water for half of the cooking time, drain it and Set aside

3. Drain pickled peppers and sauté for a few minutes in a pan with plenty of hot olive oil

4. Add salt cod, a pinch of salt and finish cooking

5. Serve hot
