Ingredients for 8 people


1 box Barilla® Collezione Gnocchetti
8 tablespoons extra virgin olive oil divided
1 clove garlic
½ cup walnuts
½ cup mint fresh
¼ cup Romano cheese
1 pint cherry tomatoes
salt and black pepper to taste



Preparation
1. Bring a large pot of water to a boil and preheat oven to 425°F

2. In a blender combine garlic, walnuts, mint and cheese, pulse for 15-20 seconds until the mixture is chopped up

3. Slowly start drizzling in 6 tablespoons olive oil, if the pesto is too thick add some small ice cubes and puree

4. Season the pesto with salt and pepper then place in a large bowl and set aside

5. Toss tomatoes with remaining olive oil, season with salt and pepper then place on a sheet tray and bake in the pre-heated oven for 10 minutes

6. Meanwhile, cook pasta according to package directions, reserving ½ cup of the cooking water

7. Drain pasta and then toss with the pesto while slowly adding the cooking water

8. Gently fold in cherry tomatoes

9. If desired, sprinkle more cheese on top before serving
