Barilla® Ditalini with Zucchini & Ricotta Cheese

Ingredients for 4 people

1 box Barilla® Ditalini
2 cups zucchini
3/4 cup ricotta cheese
1/4 cup onion
1/4 cup grated Parmigiano-Reggiano cheese
extra virgin olive oil
salt and pepper

Preparation 25 minutes preparation + 12 minutes cooking
1. Heat a tablespoon of olive oil in a pan over medium heat and add the onion

2. When the onion has softened and browned, add zucchini, salt and pepper and cover

3. After about 15 minutes, uncover and cook zucchini, allowing any water produced by the vegetable to evaporate

4. In the meantime, cook the ditalini in lightly salted boiling water for the amount of time indicated on the package

5. Drain the pasta and toss with the zucchini and ricotta, crumbled with the tines of a fork, mixing well

6. Sprinkle with the grated Parmigiano-Reggiano cheese and serve hot
