Ingredients for 8 people


1 BOX Barilla® Elbows
2 TABLESPOONS Extra Virgin Olive Oil
4 Medium Zucchini Shredded
2 CLOVES Garlic Minced
1 1/2 TABLESPOON Fresh Oregano Chopped
1/2 CUP Ricotta Cheese
8 OUNCES Sun Dried Tomatoes Chopped and Drained
1 1/2 TEASPOON Salt
1/4 CUP Parmigiano-Reggiano Cheese Freshly Grated



Preparation 15 minutes preparation + 8 minutes cooking
1. BRING a large pot of water to a boil

2. HEAT olive oil in large skillet over medium-high heat

3. Add zucchini, garlic and oregano

4. REMOVE from heat; stir in ricotta cheese, tomatoes and salt

5. COOK pasta according to package directions; drain and return to pot

6. ADD sauce mixture to hot Elbows; toss

7. Transfer to serving bowl or platter; sprinkle with Parmigiano cheese
