Ingredients for 8 people


1 box Barilla® Farfalle
4 tablespoons extra virgin olive oil
¼ tablespoon chili flakes
1 small onion sliced thin
1 medium eggplant small diced
1 jar Barilla® Chunky Traditional sauce
1 tablespoon parsley chopped
½ cup romano shredded



Preparation 10 minutes preparation + 20 minutes cooking
1. BRING a large pot of water to a boil and cook pasta 1 minute less than package directions

2. MEANWHILE in a large skillet over medium heat sauté onions and chili flakes in olive oil until translucent

3. ADD eggplant and sauté for 4-5 minutes or until soft

4. ADD the sauce and ½ cup of water and bring to a simmer

5. DRAIN pasta and toss with the sauce, cook for 1 minute in the skillet
