Ingredients for 8 people


1 BOX Barilla® Farfalle
1/3 CUP Extra Virgin Olive Oil
1 Small Onion Chopped
1 Large Red Bell Pepper Chopped
2 Small Yellow Bell Peppers Chopped
2 Anchovies
4 OUNCES Baby Arugula
1 TABLESPOON Fresh Parsley Chopped
1/2 CUP Parmigiano-Reggiano Cheese Freshly Grated



Preparation 15 minutes preparation + 16 minutes cooking
1. BRING a large pot of water to a boil

2. HEAT olive oil in large skillet over medium-high heat

3. Sauté onion, peppers and anchovies for 10 minutes or until onion is tender, stirring occasionally

4. ADD arugula; cook 1 minute; remove from heat

5. COOK Farfalle according to package directions; drain and return to pot

6. ADD arugula mixture to hot Farfalle; toss

7. Transfer to serving platter; sprinkle with cheese and parsley
