Ingredients for 7 people


1 box Barilla® Fettuccine Rigate
1 jar Barilla® Traditional Sauce
2 tablespoons extra virgin olive oil
3 Brussels sprouts quartered
1 zucchini diced
½ eggplant diced
4 asparagus stalks diced
Salt and black pepper to taste
½ cup Parmigiano-Reggiano shredded
1 tablespoon fresh parsley chopped  



Preparation 40 minutes preparation + 10 minutes cooking
1. Pre-heat the oven to 400 ˚F and roast vegetables mixed with olive oil and seasoned with salt and pepper for 30-40 minutes, or until browned and golden

2. Bring a large pot of water to a boil

3. Meanwhile, in a large skillet add Traditional sauce and 1 cup water, bring to a simmer

4. Season with salt and pepper

5. Add the roasted vegetables and gently stir to combine

6. Cook pasta according to package directions, drain and toss with the sauce

7. Remove skillet from the heat and top with cheese and parsley
