Barilla® Fideo Cut Spaghetti with Chick Peas & Thyme Soup

Ingredients for 8 people

1 box Barilla® Fideo Cut Spaghetti
4 Tbsp Extra virgin olive oil
1 Onion diced
3 cloves Garlic chopped
2 Tbsp Thyme chopped
3 cans Chick Peas
3 Quarts Chicken Stock
1 can (14 oz) Chopped Tomatoes
Black Pepper to taste
2 Tsp Parsley chiffonade

Preparation 10 minutes preparation + 30 minutes cooking
1. In a large pot, sauté chopped onions and thyme in olive oil until translucent, about five minutes

2. Add chopped garlic, cook additional two minutes

3. Stir in chick peas (reserve 1 cup of chick peas for garnish), broth, and tomatoes and bring to a boil

4. Season with salt and pepper and simmer for ten minutes

5. In batches, process the soup in a blender until very smooth

6. Add mixture to pot

7. Add the reserved chick peas and bring to a boil

8. Add Barilla® Cut Spaghetti, and cook for half of the recommended cooking time on the box

9. Let rest 10 minutes

10. Before serving, drizzle with olive oil and garnish with parsley
