Barilla® Fried Angel Hair with Red Onion, Tomatoes & Parmigiano Cheese

Ingredients for 8 people


1 BOX Barilla® Angel Hair 1/4 CUP Extra Virgin Olive Oil
2 CUPS Red Onions Julienne
3 CUPS Fresh Tomatoes Diced Peeled Seeded
2 LEAVES Fresh Basil Chopped
1/2 CUP Parmigiano-Reggiano Cheese Divided Grated
2 TABLESPOONS Butter



Preparation 10 minutes preparation + 25 minutes cooking
1. BRING a large pot of water to a boil

2. HEAT olive oil in a large skillet

3. Sauté onions over medium heat for about 10 minutes

4. ADD tomatoes, basil, and 1 cup of water and simmer

5. SEASON with salt and pepper to taste, then simmer 5-7 minutes

6. Set aside

7. COOK Angel Hair according to package directions

8. Drain and toss with ½ the sauce and Parmigiano cheese

9. Adjust seasonings and allow pasta to cool

10. MELT butter in a non-stick pan

11. ADD Angel Hair and fry until bottom is golden brown and crispy

12. Invert onto plate or cutting board

13. Return pasta to pan to cook other side

14. Cook until golden brown and crispy on both sides

15. Invert onto serving platter

16. POUR reserved sauce over pasta cake and serve
