Barilla® Gemelli with Three Cheese Sauce & Eggplant

Ingredients for 8 people

1 BOX Barilla® Gemelli
1 JAR Barilla® Three Cheese Sauce
1 1/4 CUP Eggplant Diced
1 1/2 TEASPOON Fresh Basil Chopped
1/2 CUP Water
2 TABLESPOONS Extra Virgin Olive Oil
1/2 CUP Fresh Tomato Diced

Preparation 10 minutes preparation + 20 minutes cooking
1. BRING a large  pot of water to a boil

2. COMBINE Three Cheese Sauce, eggplant, water, and olive oil in a medium saucepan

3. Simmer over low heat for 10 minutes or until eggplant is tender

4. COOK Gemelli according to package directions

5. Drain

6. TOSS pasta with the sauce

7. Add basil and garnish with diced tomatoes
