Ingredients for 6 people


1 box Barilla® Gluten Free Penne
1 pint cherry tomatoes halved
¾ cup extra virgin olive oil divided
10 leaves fresh basil washed
½ cup pistachio unsalted
1 clove garlic peeled
½ cup Parmigiano Reggiano cheese grated
salt and black pepper to taste



Preparation 10 minutes preparation + 15 minutes cooking
1. TOSS cherry tomatoes with 1 tablespoon of olive oil in a large mixing bowl, season with salt and black pepper then set aside

2. BRING a large pot of water to a boil, add salt

3. COOK pasta 1 minute less than package directions

4. COMBINE basil, pistachio, garlic, salt, black pepper and cheese in a blender

5. PULSE on medium high for 10 seconds

6. REDUCE blender to medium speed and slowly drizzle in the remaining olive oil to emulsify the pesto

7. POUR pesto into a medium sized mixing bowl

8. ADD ½ cup of pasta cooking water to pesto

9. DRAIN pasta and toss it with the pesto

10. TOP with cherry tomato salad before serving
