Ingredients for 6 people


1 box Barilla® Gluten Free Penne
1 pint cherry tomatoes quartered
½ cup extra virgin olive oil divided
10 leaves basil washed
½ cup pistachios unsalted
1 clove garlic peeled
¼ cup parmigiano reggiano cheese grated
¼ cup romano cheese grated
3 ice cubes
salt and black pepper to taste



Preparation 10 minutes preparation + 15 minutes cooking
1. CUT tomatoes into quarters, season with salt and pepper

2. DRIZZLE tomatoes in a small mixing bowl with 1 tablespoon of olive oil and set aside

3. BRING a large pot of water to a boil

4. COOK pasta 1 minute less than package directions, reserve ½ cup of the pasta cooking water

5. COMBINE basil, pistachios, garlic, cheeses, salt, and pepper in a blender and pulse on medium-high for 15 seconds

6. TURN the blender off

7. ADD in the remaining olive oil slowly to emulsify the pesto, add ice cubes and pulse until blended

8. POUR pesto mixture into a medium mixing bowl large enough to hold pasta with the pesto mixture and the tomatoes

9. ADD ½ cup of the pasta cooking water to the pesto mixture

10. DRAIN pasta and toss it with the pesto mixture, top with the cherry tomato salad before serving
