Barilla® Gluten Free Rotini with Sautéed Summer Vegetables

Ingredients for 6 people

1 box Barilla® Gluten Free Rotini
½ red onion diced
5 tablespoons extra virgin olive oil
1 zucchini diced
10 fava bean pods cleaned and peeled
1 pint grape tomatoes washed
1 yellow bell pepper roasted and diced
½ cup Parmigiano-Reggiano cheese grated (optional)
6 leaves basil torn
salt and black pepper to taste

Preparation 15 minutes preparation + 10 minutes cooking
1. BRING a large pot of water to a boil, season with salt

2. SAUTÉ onion in olive oil until translucent in a large skillet over medium heat, about five minutes

3. ADD zucchini, fava beans, grape tomatoes and yellow pepper, sauté for three minutes over high heat

4. COOK pasta according to package directions

5. DRAIN pasta and toss it with veggies in a large mixing bowl

6. ADD cheese (optional) and basil before serving
