Ingredients for 8 people


1 BOX Barilla Medium Shells
1/3 CUP Extra Virgin Olive Oil Divided
2 Fresh Lemons Juiced
2 CLOVES Garlic
1/2 POUND Bay Scallops
1/2 POUND Shrimp Chopped
3 CUPS Asparagus Coarsely Chopped
1 PINT Grape Tomato Halved
2 TABLESPOONS Fresh Italian Parsley Chopped
2 TEASPOONS Fresh Parsley Chopped



Preparation 20 minutes preparation + 20 minutes cooking
1. BRING a large pot of water to boil

2. JUICE lemons to yield 4 tablespoons lemon juice

3. COOK Medium Shells 1 minute under recommended package cooking time

4. Drain and spread on a baking sheet to cool

5. Toss with 1 tablespoon olive oil

6. COMBINE lemon juice, garlic, salt and pepper in a small bowl

7. Gradually add remaining olive oil

8. Mix well and set aside

9. HEAT 1 tablespoon olive oil in a medium skillet

10. Add asparagus and sauté for 2 minutes

11. ADD seafood to skillet and sauté for 5 minutes or until cooked through

12. Transfer to a large bowl to cool

13. ADD pasta, tomatoes, and herbs to cooled seafood mixture

14. Mix well

15. ADD vinaigrette dressing

16. Mix well and refrigerate 1 hour before serving
