Ingredients for 4 people


1/2 BOX Barilla® Mezzi Rigatoni
1 TABLESPOON Butter
2 1/2 TABLESPOONS Flour
1 CUP Milk
1/4 TEASPOON Salt
2 OUNCES Fresh Porcini Mushrooms Finely Diced (May Substitute Dried Porcini Mushrooms)
1 TABLESPOON Parmigiano-Reggiano Cheese Freshly Grated
1 TEASPOON Extra Virgin Olive Oil
1 TEASPOON Fresh Italian Parsley Chopped



Preparation 10 minutes preparation + 30 minutes cooking
1. BRING a large pot of water to a boil

2. Add salt to taste

3. ADD pasta and cook according to package directions

4. Drain well and place pasta on a large sheet pan

5. DRIZZLE with a little olive oil and let cool

6. Porcini Mushroom Filling: MELT butter in a saucepan over medium heat

7. ADD flour and cook 3 minutes, stirring constantly

8. ADD milk to a separate saucepan and bring milk to a boil

9. Add to butter and flour mixture

10. Simmer 5 minutes, whisking constantly

11. SAUTÉ diced mushrooms in a skillet with olive oil for 2 minutes

12. Add salt and pepper

13. Refrigerate 20 minutes or until cool

14. FILL Mezzi Rigatoni with filling mixture using a pastry bag

15. PLACE each Rigatoni in a miniature paper liner

16. GARNISH pieces with chopped parsley
