Ingredients for 4 people


1/2 BOX Barilla® Mezzi Rigatoni
1 TEASPOON Extra Virgin Olive Oil Divided
2 OUNCES Fresh Spinach
3 OUNCES Ricotta Cheese
2 TABLESPOONS Parmigiano-Reggiano Cheese Divided
1 PACKAGE Small Paper Liner



Preparation 10 minutes preparation + 30 minutes cooking
1. BRING a large pot of water to a full boil

2. Add salt to taste

3. ADD pasta and cook according to package directions

4. Drain well and place pasta on a large sheet pan

5. DRIZZLE with a little olive oil to taste and let cool

6. Ricotta and Spinach Filling: SAUTÉ spinach in 1 teaspoon olive oil over medium heat

7. Cool, drain and chop fine

8. GRATE 2 tablespoons Parmigiano cheese

9. ADD spinach to the ricotta cheese and mix until blended

10. ADD Parmigiano cheese and mix well

11. FILL each Mezzi Rigatoni with filling using a pastry bag

12. PLACE each Rigatoni in a miniature paper liner

13. GARNISH with Parmigiano cheese shavings
