Barilla Mini Penne with Fresh Veggies

Ingredients for 8 people

1 box Barilla Mini Penne
5 roma tomatoes
1 carrot
1 celery rib
1 onion
1 leek
1 clove garlic
1 dried hot red pepper
3 tablespoons extra virgin olive oil
Salt to taste

Preparation 25 minutes preparation + 20 minutes cooking
1. Peel, seed and dice tomatoes

2. Clean and dice carrot and leek

3. Clean and chop celery, onion and garlic and combine with carrot and leek

4. Heat 1 tablespoon of oil in a pan over medium heat and sauté chopped vegetables until tender

5. Add tomatoes and season with salt and hot red pepper

6. Continue cooking for 10 minutes over low heat

7. Season with salt and set aside keeping the sauce warm

8. In the meantime, boil pasta in plenty of salted water according to package directions

9. Drain and toss with the prepared sauce and the remaining oil
