Ingredients for 6 people


1 BOX Barilla Mini Wheels
4 TABLESPOONS Extra Virgin Olive Oil Divided
1 Fresh Lemon
2 CUPS Frozen Peas
1 POUND Boneless Skinless Chicken Breast Diced
5 SLICES Bacon Cut Into Strips
2 CUPS Cherry Tomatoes Halved
1 CUP Fresh Mozzarella Cheese Cubed (May Substitute Shredded Mozzarella Cheese)



Preparation 30 minutes preparation + 20 minutes cooking
1. BRING a large pot of water to a boil

2. COOK Mini Wheels for 6 minutes; drain and drizzle with 2 tablespoons of oil

3. Spread pasta on a cookie sheet or baking tray to cool

4. JUICE lemon to yield 2 tablespoons lemon juice

5. BRING a medium pot of salted water to a boil

6. ADD peas and boil for 5 minutes; drain and cool

7. HEAT a medium skillet over medium heat

8. Add remaining oil and chicken

9. Cook for 4-5 minutes or until cooked through; season with salt and pepper

10. Allow chicken to cool

11. COOK bacon in same skillet until crispy; drain fat and allow to cool

12. COMBINE all ingredients and allow to rest 30 minutes before serving
