Barilla® PLUS® Penne with Pancetta, Tomatoes & Peas

Ingredients for 7 people

1 box Barilla® PLUS® Penne
4 ounces Pancetta (substitute bacon) Julienne
3 tablespoons extra virgin olive oil divided
1 pint Grape tomato Halved
8 ounces Frozen Peas thawed
1/2 cup Water
1/3 cup Romano Cheese Grated

Preparation 6 minutes preparation + 16 minutes cooking
1. Bring a large pot of water to a boil

2. Add the pancetta to a cold skillet and Sauté over medium Heat until crisp

3. Drain, discard fat and reserve pancetta

4. Add tomatoes and half of the olive oil to the skillet

5. Sauté the tomatoes over medium Heat until the skins are slightly blistered

6. Season with salt and pepper

7. Add the peas and ½ a cup of water

8. Cook until most of the water has evaporated about 6 minutes

9. Cook PLUS® Penne according to package directions

10. Drain and Toss the pasta with the pea mixture

11. FINISH with the grated cheese, remaining olive oil, and pancetta
