Ingredients for 7 people


1 BOX Barilla® Plus® Spaghetti
1/3 cup extra virgin olive oil
1 clove garlic
2 medium eggplants diced
1/4 cup flour
1/2 cup Kalamata pitted olive halved
2 pints cherry tomatoes halved
1/2 cup pecorino cheese grated
6 leaves fresh basil sliced very thin



Preparation 1 hours preparation + 30 minutes cooking
1. Sprinkle eggplants with salt in colander

2. Set aside to drain for 1 hour

3. Bring a large pot of water to a boil

4. Heat olive oil in a large skillet

5. Press the garlic clove with the flat of a knife

6. Add to skillet and sauté for 1 minute

7. Sprinkle eggplants with flour

8. Add to skillet and cook until tender

9. Stir in cherry tomatoes and olives

10. Cook 2 more minutes

11. Cook Plus® Spaghetti according to package directions

12. Drain

13. Combine Plus® Spaghetti with sauce and mix well

14. Add grated cheese and basil
