Ingredients for 7 people


1 BOX Barilla® ProteinPLUS™ Spaghetti
1/3 CUP Extra Virgin Olive Oil
1 CLOVE Garlic
2 Medium Eggplants Diced
¼ CUP Flour
½ CUP Kalamata Pitted Olive Halved
2 PINTS Cherry Tomatoes Halved
½ CUP Pecorino Cheese Grated
6 LEAVES Fresh Basil Sliced Very Thin



Preparation 1 hours preparation + 30 minutes cooking
1. SPRINKLE eggplant with salt in colander

2. Set aside to drain for 1 hour

3. BRING a large pot of water to a boil

4. HEAT olive oil in a large skillet

5. PRESS the garlic clove with the flat of a knife

6. Add to skillet and sauté for 1 minute

7. SPRINKLE eggplants with flour

8. Add to skillet and cook until tender

9. STIR in tomatoes and olives

10. Cook 2 more minutes

11. COOK pasta according to package directions

12. Drain

13. COMBINE pasta with sauce and mix well

14. ADD cheese and basil
