Ingredients for 8 people


1 Box Barilla Rotini
4 tbsp Olive oil
1 14oz pkg quartered Frozen Artichokes
½ cup chopped Black Olives
2 tbsp chopped Capers
1 ea diced Roasted red bell pepper
1 ea diced Roasted Yellow bell pepper
2 tbsp chopped Oregano
½ cup shredded Parmigiano cheese



Preparation 10 minutes preparation + 15 minutes cooking
1. In a large skillet cook artichokes in 1 tbsp olive oil until lightly brown in color

2. Remove from heat to cool

3. Bring a large pot of water to a boil

4. Season water with salt and cook pasta 1 minute under required cooking time

5. Drain and toss with 1 tbsp olive oil, place on sheet tray to cool down

6. Once cool, place in a large bowl and add all remaining ingredients

7. Toss to combine
