Barilla® Thick Spaghetti with Red Pesto

Ingredients for 8 people

1 box Barilla® Thick Spaghetti
1/2 cup dried tomatoes in oil
6 tablespoons pine nuts
1 clove garlic
2 tablespoons extra virgin olive oil
1/2 cup Parmigiano-Reggiano cheese grated
Salt and pepper to taste

Preparation 10 minutes preparation + 10 minutes cooking
1. In an aluminum pan over medium heat combine drained tomatoes, peeled garlic clove and pine nuts and cook, stirring with a wooden spoon until the pine nuts turn golden

2. Turn off the heat and pour into a blender

3. Add grated cheese and process until smooth and creamy

4. Transfer mixture to a bowl, sprinkle with pepper and add oil in a stream, stirring, until the sauce is thick but fluid

5. In the meantime, boil the vermicelli in plenty of salted water according to package directions

6. Drain and toss with the prepared sauce and serve immediately

7. Whole grain spaghetti may be substituted for the vermicelli
