Ingredients for 4 people


1 PACKAGE Barilla® Three Cheese Tortellini - Family Size
2 TABLESPOONS Extra Virgin Olive Oil
1/2 CUP Onion Diced
2 CUPS Zucchini Diced
1/8 TEASPOON Black Pepper Freshly Ground
1 CUP Roasted Red Pepper Sliced
9 OUNCES Fresh Baby Spinach
1 CUP Fresh Tomato Diced



Preparation 6 minutes preparation + 9 minutes cooking
1. Bring a large pot of water to a boil

2. cook Three Cheese Tortellini according to package directions

3. Meanwhile, sauté onions in oil in a large skillet over medium heat for 5 minutes

4. Add zucchini and black pepper, cook for 3 minutes

5. Season with salt

6. Add red peppers and baby spinach and sauté for 1 additional minute

7. Drain Three Cheese Tortellini and mix with sauce in skillet

8. stir in tomatoes and serve
