- 1 Box Barilla® Three Cheese Tortellini - Family Size
- ½ bunch asparagus
- ½ cup scallion, white part only
- 3 tablespoons extra virgin olive oil
- 1 small zucchini diced, seeded
- 2 plum tomatoes blanched, peeled, diced
- ½ cup Parmigiano-Reggiano cheese, grated

Bring a large pot of water to a boil

Remove the asparagus tips and cut the remaining part into ¼ inch long pieces

Slice scallions into small rings

Sauté the scallions, zucchini and asparagus in olive oil in a medium skillet over medium heat for about 8 minutes

Add tomatoes and sauté for 2 more minutes

Season with salt and pepper

Cook Three Cheese Tortellini according to package directions

Drain and add to the vegetable sauce

Sprinkle with cheese and serve
