Barilla® Tri-Color Penne with Marinated Cherry Tomatoes & Cheese

Summer Pasta Salad


Ingredients for 7 people

1 box Barilla® Tri-Color Penne
4 tablespoons extra virgin olive oil
1 clove chopped garlic
1 tablespoon chopped thyme
2 pints halved cherry tomatoes
1 tablespoon cut chives
1 cup diced fresh mozzarella
1 tablespoon lemon juice
Salt and black pepper to taste
½ half cup shredded Parmigiano Reggiano cheese

Preparation 15 minutes preparation + 15 minutes cooking
1. Bring a large pot of water to a boil

2. Cook pasta 1 minute less than package directions, drain well and toss with 1 tablespoon olive oil

3. Place pasta on sheet tray to cool

4. In a large skillet sauté garlic and thyme in 2 tablespoons olive oil until slightly yellow in color; set aside

5. In a small bowl combine remaining olive oil, chives, tomatoes, mozzarella, lemon juice and cooked garlic and thyme

6. Season with salt and pepper

7. Toss pasta with marinated tomatoes and mozzarella

8. Top with Parmigiano Reggiano cheese

9. Let the flavors combine for 20 minutes before servin or chill and serve as a pasta salad
