Barilla® Tri-Color Penne Pasta Salad with Tuna, Eggs, Green Olives & Capers

Ingredients for 6 people


1 box Barilla® Tri-Color Penne
6 tablespoons extra virgin olive oil
2 tablespoons lemon juice
4 hard-boiled eggs chopped
1 7-oz can tuna in olive oil drained
1 teaspoon capers
chopped
1 cup green olives sliced in rounds
6 leaves basil chiffonade
Salt and black pepper to taste



Preparation 10 minutes preparation + 20 minutes cooking
1. Bring a large pot of water to a boil

2. Cook pasta 1 minute less than package directions

3. Drain and toss with 1 tablespoon olive oil; place on a sheet tray to cool

4. In a large bowl combine 5 tablespoons of olive oil, lemon juice, eggs, tuna, capers, olives and basil; gently toss to combine

5. Season with salt and pepper to taste, then serve
