Barilla® Tri-Color Rotini with Peppers & Gorgonzola Cheese

Ingredients for 6 people


1 box Barilla® Tri-Color Rotini
1 tablespoon extra virgin olive oil
1 small cut julienne style red onion
1 medium diced red bell pepper
1 medium diced yellow bell pepper
1 medium diced green bell pepper
Salt and black pepper to taste
½ cup crumbled Gorgonzola cheese
1 teaspoon finely chopped parsley



Preparation 10 minutes preparation + 15 minutes cooking
1. Bring a large pot of water to a boil

2. In a large skillet, heat olive oil and sauté onions for 2 minutes

3. Add peppers and sauté an additional 5 minutes

4. Season with salt and pepper

5. Cook pasta according to package directions

6. Drain pasta, reserving ¼ cup of the water

7. Toss pasta with peppers and onions, and pasta water

8. Fold in cheese and top with parsley
