Ingredients for 6 people


1 BOX Barilla®Tri-Color Rotini
1 1/2 POUND Plum Tomato Peeled Seeded
1/4 CUP Extra Virgin Olive Oil
10 LEAVES Fresh Basil Sliced Thin
1 CLOVE Garlic Minced
1/2 CUP Ricotta Salata Cheese Grated



Preparation 2 hours preparation + 10 minutes cooking
1. BRING a large pot of water to boil

2. CUT an ""x"" at the bottom of each tomato with a sharp knife

3. Dip tomatoes in boiling water for about 2 minutes

4. Remove from water, cool

5. When cool enough to handle, peel and seed tomatoes

6. Chop into 1-inch cubes

7. MIX the tomatoes, olive oil, salt, pepper, basil, and garlic in a large bowl

8. Marinate for about 2 hours

9. BRING a large pot of water to a boil

10. ADD pasta to boiling water

11. Cook according to package directions

12. DRAIN pasta and immediately add to tomato mixture

13. SPRINKLE with ricotta cheese

14. Mix well

15. Transfer to serving platter or bowl and serve
