Ingredients for 6 people


1 box BARILLA White Fiber Rotini
3 Tbs extra virgin olive oil
1 cup arugula
1 clove garlic
1 Tbs pine nuts
1 Tbs parmigiano reggiano grated
6 leaves fresh basil
to taste salt and black pepper
1 lb medium size Shrimp
2 cups green beans cut ½ inch



Preparation 10 minutes preparation + 15 minutes cooking
1. BRING a large pot of water to a boil

2. Meanwhile, in a blender PROCESS the pine nuts, garlic, and Parmigiano

3. ADD the arugula and basil and blend well

4. DRIZZLE in 2 Tbs of extra virgin olive oil with a few ice cubes and PROCESS until creamy

5. COOK the pasta according to the package directions

6. Meanwhile, add the beans to the boiling water with the pasta

7. In a skillet, HEAT remaining olive oil, and sear shrimp on both sides

8. DRAIN the pasta, making sure to reserve ½ cup of cooking liquid

9. ADD the drained pasta, beans and ½ cup cooking liquid to the skillet with the shrimp

10. REMOVE from the heat and fold in the pesto
