Ingredients for 6 people


1 box Barilla® White Fiber Rotini
3 tablespoons extra virgin olive oil
1 cup arugula
1 clove garlic
1 tablespoon pine nuts
1 tablespoon Parmigiano-Reggiano cheese - grated
6 leaves fresh basil
Salt and black pepper to taste
1 pound medium size shrimp
2 cups green beans cut 1/2 inch



Preparation 10 minutes preparation + 15 minutes cooking
1. Bring a large pot of water to a boil

2. Meanwhile, in a blender PROCESS pine nuts, garlic, and cheese

3. Add arugula and basil; blend well

4. Drizzle in 2 tablespoons olive oil with a few ice cubes and process until creamy

5. Cook pasta according to package directions

6. Meanwhile, add beans to the boiling water with the pasta

7. In a skillet, heat remaining olive oil, and sear shrimp on both sides

8. DRAIN pasta, making sure to reserve 1/2 cup of pasta cooking water

9. Add drained pasta, beans and 1/2 cup cooking water to the skillet with the shrimp

10. REMOVE from the heat and fold in the pesto
