Barilla® White Fiber Spaghetti with Zucchini & Crispy Pancetta

Ingredients for 6 people

1 box Barilla® White Fiber Spaghetti
4 tablespoons extra virgin olive oil
1 large red onion cut julienne style
1 pound zucchini cut julienne style
4 ounces pancetta rendered
½ cup pecorino cheese shredded
salt and black pepper to taste

1. BRING a large pot of water to a boil, add salt

2. HEAT olive oil in a large skillet over medium heat and cook the onion until well caramelized, about 15 minutes

3. ADD zucchini and sauté for 3 minutes, season with salt and pepper

4. RENDER pancetta until crispy in a separate small skillet then drain on a paper towel

5. COOK pasta 1 minute less than package directions

6. DRAIN and reserve 1 cup of the cooking water

7. ADD pasta and cooking water to the vegetable mixture, stir until well combined

8. Remove skillet from heat, and stir in cheese and pancetta before serving
