Ingredients for 7 people


1 box Barilla® Whole Grain Spaghetti
4 tablespoons extra virgin olive oil
1 clove garlic chopped
1 jar roasted red bell peppers sliced thin
3 Zucchini sliced half moon
Salt and pepper to taste
1 tablespoon chopped parsley
½ cup pecorino cheese grated



Preparation 10 minutes preparation + 20 minutes cooking
1. BRING a large pot of water to a boil

2. MEANWHILE in a skillet sauté garlic in olive oil for 1-2 minute or until lightly golden in color

3. ADD zucchini and sauté over medium heat 4-5 minutes

4. ADD peppers and sauté an additional minute then season with salt and pepper

5. COOK pasta according to package directions, once the pasta is almost cooked reserve ½ cup of the cooking water

6. ADD the cooking water to the sauce and bring to a simmer

7. DRAIN the pasta and sauté with the sauce for 1 minute or until well incorporated
