Blueberry Tart

Ingredients for 7 people

9 tablespoons Butter
2 7/8 cups Sugar Divided
2 Eggs
2 cups Flour
1/2 Vanilla Bean
1 3/4 pound Fresh Blueberry
1 tablespoon Powdered Sugar
16 fl ounces Whipping Cream

1. Mix the butter, ¾ cup sugar, vanilla [scrub the center], the eggs and the flour

2. Do not mix too long

3. Flat the mixture to 1/3 inch in between of two sheets of parchment paper

4. Let rest in the fridge for two hours

5. Line the tart mold

6. Place a tailored cut sheet of parchment on the dough, top with dry beans or rice to prevent from bubbling and bake at 375°f for 20 minutes

7. Meanwhile, cook 1 lb of blueberries with 1¾ cups sugar until the berries are completely melted and the released water thickens up

8. Cool down and place on top of the cooked crust

9. Top with the rest of the blueberries

10. Sprinkle with powdered sugar

11. Bake for 20 minutes at 375°f

12. Whip the heavy cream with remaining sugar

13. Serve the tart at room temperature with whipped cream
