Branzino all ‘Acqua Pazza



Ingredients for 4 people


1/4 cup Olive Oil
2 cloves Garlic Divided
6 Large Plum Tomatoes Chopped
1/4 cup Fresh Oregano
1 Medium Hot Red Pepper
2 pounds Mediterranean Sea Bass Fillets Cleaned
3 sliceS Italian Bread Grilled



Preparation
1. Preheat oven to 350ºf

2.   place olive oil and 1 clove of garlic in a 13x9 inch baking pan

3. Bake 3 to 4 minutes or until garlic turns golden yellow

4.   add tomatoes, oregano, salt and hot pepper mix lightly

5.   bake 15 minutes

6. Remove from oven and top with fish

7. Cover with foil and bake 10 to 12 minutes longer or until fish flakes easily with a fork

8.   rub italian bread with remaining garlic clove and cut into croutons

9.   garnish with croutons and serve
